I am reposting this Dessert Fluff recipe. This is a favorite of mine and from what I can see from Pinterest, a favorite of many. I posted this a while ago and want to reintroduce it incase you may have missed it buried in my blog. It is low-carb, high-fat which makes it a perfect treat both a low-carb and ketogenic lifestyle. I’ll talk more about alternative sweeteners in my next post but for now enjoy this sugar-free, delicious dessert.

Cream Cheese Fluff


One of my go to desserts. It’s super fast, easy and fun to make. I love to make this because I love watching it turn from nothing into something. It’s rich, creamy and just sweet enough to satisfy a dessert craving. This amazing concoction came to me by way of DJ Foodie and his Taking Out The Carbage cookbook.

Prep Time: 3 minutes


Cook Time: 2 minutes





Servings: 6







Ingredients




  • 8 oz. Cream Cheese (room temperature)

  • 1 tsp. Pure Vanilla Extract

  • 1/4 Cup Swerve Confectioner's Sweetener

  • 1/4 tsp. Organic Pure Stevia Leaf Extract Powder (Trader Joe's)

  • pinch of salt

  • 1/2 Cup Heavy Whipping Cream

  • Optional: 1-2 tablespoons heated Frozen Blueberries & Juice


Instructions




  1. Put the room temperature cream cheese into large mixing bowl, mix on low and add the vanilla, salt and sweeteners. Continue to mix until well combined. Stop mixer and scrape sides and bottom of bowl making sure no cream cheese is left behind.

  2. Turn mixer up to medium-high and in a steady, narrow stream, slowly add the heavy whipping cream. Continue to mix until the ingredients turn into a thick whipped cream, "fluff". When you turn the mixer off the cream should had sturdy peaks.

  3. Don't over mix or it could turn to mush. Also delicious and great as a sauce for a fruit salad or even pancakes but not really fluff.

  4. If you want to add the optional blueberry topping, add organic, frozen blueberries to a small pot and over low-medium heat warm the blueberries until hot and saucy (a few minutes). You can also do this in the microwave, high heat for about 2 minutes.

Notes




The nutritional information is for 6 servings. I evenly distribute the fluff into 6 small bowls which I cover and keep in the fridge. If we have company there are never leftovers.
